→ Berry Jewels
16 - 1 cup fresh raspberries
17 - 1 cup fresh blueberries
18 - 1/2 cup sliced strawberries
# Cooking Steps:
01 - Whisk flour, baking powder, and salt together in a bowl. Beat butter and sugar until fluffy; add egg and vanilla. Combine dry ingredients gradually with wet mixture to form dough. Divide dough, wrap, and chill 30 minutes. Preheat oven to 350°F. Roll dough to 1/4 inch thickness and cut crown shapes. Place on lined baking sheets and bake 10-12 minutes until edges turn golden. Cool completely, then decorate with royal icing and sprinkles.
02 - Melt white chocolate and butter over simmering water until smooth. In a saucepan, whisk egg yolks and sugar over low heat until slightly thickened, about 2 minutes. Stir egg mixture into melted chocolate and let cool. Whip 1 cup heavy cream to stiff peaks, then gently fold into chocolate mixture. Chill mousse at least 2 hours before serving.
03 - Arrange crown cookies on a serving tray. Fill small glasses or bowls with mousse and garnish each with berries. Scatter remaining berries around cookies and mousse to create a jewel-studded presentation.
